Green beans are my favorite vegetable. They are tasty just the way they are, but I also enjoy dressing them up on occasion. When I have a little extra time, I’ll take a pre-washed bag of fresh green beans from the grocery store (or the farmer’s market when in season) and sauté them with a few delicious add-ins. Try this recipe for a boost of flavor to an already popular vegetable.
Ingredients:
- 4 cups fresh green beans, or one 12 oz pre-washed bag, ends trimmed
- 1/3 cup slivered almonds
- 1/2 cup diced red pepper
- 1-2 TB olive oil (garlic-infused if you have it)
Heat oil in a large sauté pan on medium heat. Add pre-washed and snipped green beans and red pepper and sauté until beans are fork-tender or desired tenderness is reached, 5-10 minutes. After the first few minutes of sautéing, add the slivered almonds. Salt and pepper to taste. Makes 4 servings.
